Peppermint Cake Roll

Our church has their annual dessert auction fund raiser on Sunday, and I signed up to bring a couple desserts.  I made one of this tonight...it stores in the freezer, so will be fine until Sunday.  Plus, I'm playing in a volleyball tournament on Saturday, and I'm so out of shape, I am pretty certain I will not want to bake ANYTHING on Saturday night!

The cake part of the roll is angel food cake from a box.  I baked it in two 15x10 inch pans, then took each one out and rolled it in a towel to cool.  The recipe makes two rolls, so I will be donating one for the auction, and keeping one in the freezer for us to eat!

When the cake has cooled, you flatten it out and spread it with a mixture of cool whip and peppermint extract.

I smashed up a bunch of candy canes and starlight mints with my meat tenderizer.  That was fun...and loud!

Then you drizzle on hot fudge, and sprinkle with the chopped peppermints.  

These pictures turned out interesting...the camera was set to focus only on a strip across the middle and be blurred on the edges, and I couldn't figure out how to change it.

All rolled up and frosted with the rest of the cool whip mix!  Into the freezer they go!
