CSA

Scott and I joined a CSA this year.  In a CSA, you pay a set fee upfront for "shares" of a farmers crops.  A family in our church that lives in Sigourney, about 20 miles away, operates this CSA, and we paid for a 1/2 share and will get produce from May through October.  We received our first round last week.
Here is our first round of produce from the CSA: salad greens, spinach, mustard greens, asparagus, kale, garlic greens, and radish
 I don't like radishes, so Scott is in charge of eating those.  He doesn't like asparagus, spinach, or kale, so those were my responsibility.  We will be eating a lot of salads this week.  If each week is similar, we may lose weight this summer!  :)

I made lasagna rolls to use up some of our delicious produce.  
After cooking the lasagna noodles, spread with cottage cheese, cooked meat (I had ground turkey with Italian seasonings), and sauteed greens.

Roll up the noodles, and put them in a pan.

Cover with spaghetti sauce and sprinkle with some mozzarella cheese, and bake for about 30 minutes.  Yummy!  Notice some of the rolls have a toothpick in them.  Those are the ones without spinach and kale for Scott.  It probably would have been easier and less time consuming to make a regular lasagna, but this allowed me to put the healthy and yummy stuff in my rolls, and leave it out in the rolls for Scott.
 Aside from salads, I have been working on yummy and creative ways to use our produce.  If we get more kale this week, I might try making kale chips--I have heard those are delicious.  This week I have been making smoothies with the kale and spinach.  Scott doesn't drink them, but Laurel sure likes them!  That is great, because it is about the only way she will eat a vegetable right now!
